Easy is a word I like to hear. And easy is the name of this breakfast casserole. It’s so easy I can make it with my eyes closed. Just about every Sunday I mindlessly chop, stir, crack and pour all of the ingredients of the breakfast casserole. I cook this primarily for my husband to feed on for breakfast during the busy work week. Typically a work week morning for him is similar to a roaring tornado wildly rotating, picking up speed and size without a second to spare. He doesn’t give himself much time to get ready or even eat breakfast. The breakfast casserole is his life-saver. This seriously is so delicious and filling. I sometimes bring it to work and dip it in organic ketchup. I also made it for a brunch I hosted and was a huge success. Ok enjoy this easy dish!
