Top ‘O The Mornin’ to ya! In celebration to St. Patrick, I introduce to you to a skinny version of Irish Cottage Pie. What makes Irish Cottage Pie is the beef, the mixed vegetables, the light beef sauce, and the mashed potato. Not to be confused with Shepherds Pie, which has minced lamb in it. There are a lot of great cottage pie recipes floating all over the internet. My cottage pie recipe exceeds them all! A robust mixture of beef and vegetables blends superbly with the beef sauce. When you thought it couldn’t get any better, add the creamy mashed cauliflower over the beef mixture to complete your Skinny Irish Cottage Pie. A very practical and substantial meal.
Let’s talk about how FREAKIN DELICIOUS my Paleo Spaghetti with Meat Sauce is. It’s so flavorful and filling; I cooked plenty to feed the entire neighborhood! I’m ecstatic to have leftovers for the next couple of days. If leftovers aren’t your thing, I suggest you freeze the meat sauce in freezer safe containers. I utilized the Organicville Pasta Sauce mason jars. A fabulous surprise in your freezer when you are frantically searching for a bite to eat.

Two things that stood out to me the most at this year’s Super Bowl 50: Lady Gaga’s bright red pantsuit and the Mountain Dew ‘Puppy Monkey Baby’ commercial. I still have goosebumps from Lady Gaga’s theatrical performance of the Star Spangled Banner. I’d say she is right up there with Whitney Houston’s 1991 performance of the national anthem. The half time show was ho-hum until Bruno Mars kicked it into gear. The game itself was a little dull being more defense dominated. Good for the Broncos, I’m happy with Peyton Manning’s win. I loved Manning’s response to his victory to-do list- kissing his wife and kids, celebrating with family and teammates, and that he’s “gonna drink a lot of beer tonight…Budweiser. Von Miller’s buying.” Manning claims Budweiser didn’t pay him to say that, but regardless it was unexpected and fun to hear him say that.
