Did you watch The Bachelor this week? My girl Jennifer and my husband’s pick, Olivia are both still in the running! Olivia looks to be one of the biggest font-runners on the show, but I have a feeling she won’t be one of the final two. She’s too full of herself. There’s a difference between being confident and conceited. What was with Olivia crying to Ben about her ugly toes after he just told the group he lost friends in a plane crash? I’m worried about Ben getting close to Lauren. I think Lauren is my biggest competition. Crossing my fingers Jennifer gets a one-on-one date next week. Lace the drama queen finally showed herself off the show. Even the first night Lace was complaining to Ben about not making eye contact with her during the rose ceremony.
Onto the good stuff, Creamy Chicken Skillet. The creator of this dish Rebecca Bohl is a genius. Typically before I cook a new recipe I skim through the description of it. Rebecca grabbed me in the first sentence of how she couldn’t stop sampling the dish even while she was cooking it. As did I once I got cooking. It’s been a week since I last made it and I’m already having mad cravings for it. It’s dairy-free, loaded with veggies and the rich, creamy texture is surely satisfying. The recipe calls for kale, I used spinach and topped it with parmesan.
